By now you can see how much I like risottos (yummy, yummy, yummy). This is a recipe from my culinary bible (The Silver Spoon) and I have to confess that I was really surprised with it. This is one of the most impressive ones I have done so far. Moreover, this is a safe shot for a romantic dinner.

Parmiggiana Estiva

Inspired in the genious recipe of the Sora Margheritta, today we show you the evolution of this italian classic in its summer version. The Parmiggiana is a kind of lasagna, made of eggplant (fried or roasted), tomato sauce, parmesan cheese (from what it gets the name), breadcrumbs and some mozarella to decorate.
This is a more refreshing version of the italian classic.

This is one of my favourite side dishes. There are some days that we cook something simple but we want an stunning dish, and the verticality of this side dish always impress people at the table. Moreoves, the fact that both the inside and the outside of this product are edable is a fact that any chef (or learning cook as myself) always love.
