[iLike] Dani García and his Nitrogel

During this week, Madridfusion is being held. It is one of the most important cooking events in Spain (and some would say from Europe). The structure of this event is quite similar to the scientific congresses I normally attend. The best chefs go there to present their work and make their presentations, showing everyone how good their work is.

This year I couldnt find any, but I found videos from last years edition. These days, I watched a few of them, and honestly, only one of them really surprised me. Dani Garcia left my mouth wide open. This andalusian guy is a talented chef with the soul of a scientist, and you'll see why after watching the video.

If you are not willing to see a 13 minutes video in spanish, I'll just tell you that he CREATES a tomato. The rest of the development of the dish is interesting, although the most impressive part is the creation of the tomato. So looking forward to taste it!

Esta semana se celebra en el Madridfusion. Es uno de los eventos culinarios mas importantes de nuestro país. La estructura de este evento es muy similar a la de un congreso científico a los que suelo asistir. Los mejores chefs van a presentar sus trabajos, y los exponen a modo de ponencias, demostrando lo bueno que es su trabajo.

Este año aún no están disponibles, pero he podido encontrar muchos vídeos del año pasado. Estos días he visto algunos, y sinceramente solo uno de ellos ha logrado sorprenderme de una manera excepcional. Se trata del chef Dani García. Este malagueño es un tío muy profesional con alma de científico, y esto lo entendereis despues de ver el vídeo.

Si no estais dispuestos a chuparos los 13 minutos del vídeo, solo deciros que este chef CREA un tomate. El resto de la elaboración del plato es interesante, pero lo más impresionante es como crea el tomate. Estoy deseando de probarlo!

Spinach Gnocchis (aka Malfatti)

  • This recipe is one of my signature dishes. I discover it in the italian city of Brescia, and in an osteria whose name I cannot remember. In this osteria, the dish of the day were these amazing Malfatti ("badly-done" in english). These are a bit messy to elaborate, but totally worthed!

Spinach Gnocchis

Ingredients:

  • 1 kg of spinach.

  • 350gr of ricotta cheese.

  • 2 egg yolks

  • 100gr parmigian cheese

  • Salt, pepper and oregan

  • Flour.

  • Bread Crumbs.

  • 100 gr of butter and olive oil


Elaboration:

Boil the spinach (if frozen as specified in the package, otherwise with very few water). Once they are boiled, dry them out really well and chop them finely.
Mix the spinach in a bowl with the ricotta cheese, the egg yolks, 2 tablespoons of breadcrumbs, half of the parmigian cheese, salt and pepper. Mix it really well. Prepare balls a little bit bigger than a chupachups and cover them in flour.
Prepare a pot with around 3 liters of water to boil the gnocchis with some salt. Once the water is boiling add the gnocchis and wait till they float, which will mean they are cooked. Take them out. Meanwhile, melt the butter and mix it with 3 ts of olive oil and oregan.

Serve the gnocchis on a dish and cover them with the butter and oregan sauce, and finish it with some oregan.

Gnocchis de Espinacas. Malfatti

Esta receta es uno de mis clásicos y de mis recetas favoritas. La descubrí en la ciudad italiana de Brescia, y en una osteria que no recuerdo el nombre. En esta osteria el plato del día eran estos maravillosos Malfatti (mal hechos en castellano). Son un poco engorrosos, pero el resultado merece la pena.

Spinach Gnocchis

Ingredientes (para unos 18-20 gnocchis Ó 3ó4personas)

  • 1kg de espinacas.

  • 350gr de ricotta.

  • 2 yemas de huevo.

  • 100gr de parmesano.

  • Sal, pimienta y orégano.

  • Harina.

  • Pan rallado

  • 100gr. Mantequilla y Aceite.


Receta:

Cocer las espinacas (si son congeladas como diga el paquete y si son frescas con muy muy poca agua). Escurrir MUCHÍSIMO las espinacas y picarlas bastante.
En un bol mezclar las espinacas, con la ricotta, las yemas de huevo, 2 cucharadas soperas de pan rallado, la mitad del parmesano, sal y pimienta. Mezclar bien la masa. Hacer pelotitas del tamaño deseado y enharinar.
Poner hervir agua (unos 3 litros) con un poco de sal (unas 4-6 cucharaditas) y echar las pelotitas hasta que floten. El momento en el que se saben que los gnocchis estan es cuando flotan. Sacar y reservar.
Mientras tanto, fundir la mantequilla con un poco de aceite y añadir el orégano.

Emplatar los gnocchis (4-6 por persona), echar un poco de la salsa por encima, y rallar parmesano para decorar.

As any mediocre computer scientist, the very first message to send to the world (and prove that everything works fine) is the famous: Hello World!

Now that all the greetings are done, I'll move on to relate you why this is here.

After a few years away from the good care of my mum, and always lacking money on my pockets, I had to teach myself how to delight my palate. It seems to be known by those that know me well (after their comments and their extreme-pleasure faces) that I do not suck really badly at cooking.

This little talent combined with my scientific curiosity and a spoonful of humour (bad jokes forever! not intelligent jokes) is what has always made me look for new recipes, and after lots of friends asked for them, those are finally here.

I only have one goal for the moment, I want to share these recipes that I master so I can receive critics from you so to improve them.

So, do not hesitate on speak out your mind!

Hola Mundo!

Bienvenidos!

Como cualquier mediocre informático que se precie, el primer saludo (y prueba de que todo funciona como debería) es el famoso: Hola Mundo!

Ahora que ya os he saludado, paso a relataros las razones que me han movido a crear este blog de una vez por todas.

Después de algunos años lejos del amparo de mi madre, y teniendo siempre menos dinero en el bolsillo del que me gustaría tener, tuve que amaestrarme en las nobles artes de los fogones para satisfacer mi paladar. Se conoce, según los comentarios de algunos y las gesticulaciones de placer de otras, que no me sale del todo mal eso de cocinar.

Este pequeño talento combinado con mi curiosidad científica y unas gotitas de humor (del malo eh? nada de humor inteligente) es lo que siempre me ha hecho buscar nuevas recetas, y que después de que muchos me las hayan pedido, lleguen aquí.

Mi objetivo ahora mismo es solo uno, compartir estas recetas que me salen bien para que me las critiqueis y poder así mejorarlas.
