Parmiggiana Estiva

Inspired in the genious recipe of the Sora Margheritta, today we show you the evolution of this italian classic in its summer version. The Parmiggiana is a kind of lasagna, made of eggplant (fried or roasted), tomato sauce, parmesan cheese (from what it gets the name), breadcrumbs and some mozarella to decorate.
This is a more refreshing version of the italian classic.




INGREDIENTS: (for 1 person)

  • 3 slices of fried eggplant
  • 2 slices of tomato
  • 3 slices of fresh mozzarella di buffala
  • A couple of fresh basil leaves.

PREPARATION
  • Place a slice of eggplant. On top of it, one leaf of basil, one slice of tomato (with some salt) and the mozarella.
  • Repeat the first step creating another level.
  • Finish with eggplant, mozarella and a touch of olive oil.
