Salmon Rolls

This is one of the simplest appetizers that always work in any party. It works for vegetarians and for those who want to be impressed. The combination of flavours is really good, and it can be served as finger food. Bring a touch of distinction to your tapas with this dish.

  • 200gr of smoked salmon
  • 2 large fresh eggs
  • Pesto Sauce.

  • Beat the eggs with some salt.
  • In a hot pan, cook the eggs as if an omelette. We are trying to obtain a big omelete sheet.
  • Once this sheet is cooked and not warm, cover it with the pesto sauce.
  • Place the salmon on top of the pesto.
  • On top of a base of transparent film, place our omelete-pesto-salmon dish and roll it smoothly making some pressure.
  • Be sure that the ends of the “package” we prepared are well closed.
  • Place in the fridge for a couple of hours.
  • Cut rolls of a couple of centimeters thick.
