Sernik Ricotta Cake

Today at “A Ojo” we have an special guest: Gabriela Petrikovich. This friend of mine is a great designer and she keeps for herself some good cooking tricks, although sometimes she shares them. This cake is one of them, and it is simply spectacular!

Spaghetti con Salsa de Gambas y Ricotta

Este plato esta fuera de cualquier libro de cocina clásica italiana. Probablemente este sea uno de los platos que cuando se lo cuentas a un italiano te mira con cara de asco, pero la prueba de fuego siempre es darselo a probar antes de que sepan que es. La reacción normal del italiano medio sera decir que esta bien, pero que su madre lo hace mejor de otra manera. Cual fue mi sorpresa cuando uno de mis amigos italianos me pidió la receta para darsela a su madre! Así que aquí teneis la receta que sorprendió a un italiano.




Ingredientes (para 2 personas y que sobre un poquito):

  • 1/2 diente de ajo.

  • 1 chalota tamaño bola de billar.

  • (sino tenemos chalota) 1 cuarto de cebolla blanca

  • Medio pimiento rojo (misma cantidad que la cebolla)

  • 3 tomates secos en aceite de oliva.

  • 200 gr. de gambas peladas (pueden ser substituidas por otro marisco mas caro según el presupuesto)

  • 150gr de ricotta.

  • 100 ml de nata.

  • Un poco de perejil.

  • 250 gr de spaghetti al nero di seppia.


Elaboración:

En un fogón poner a potencia máxima una olla con unos 2 litros de agua para hervir la pasta.
Mientras tanto, laminar el ajo, y cortar a taquitos pequeños la cebolla y el pimiento.
Sofreir a fuego medio el el ajo, la cebolla y el pimiento en una sartén con una cucharada de aceite de oliva y otra cucharada del aceite donde se conservan los tomates.
Una vez la cebolla empieze a dorarse, añadir la mitad de las gambas.
Cuando las gambas hayan cogido color, añadir la nata de cocina.

Mientras tanto el agua debería estar hirviendo. Es en este momento cuando se incorpora la sal, calculad unas dos cucharadas de sal por cada 100gr de pasta y litro de agua. Luego seguid las instrucciones del fabricante y vuestro gusto a la hora de cocinar la pasta. A mi me gusta al dente, así que la dejo siempre uno o dos minutos menos de lo que marca el paquete. Incorporar la pasta, y escurrir una vez cocida.

El sofrito debe triturarse con la batidora o robot de cocina, e incorporar mientras se tritura el perejil y la ricotta.
Dejar reposar mientras en la sartén salteamos el resto de las gambas con un poco de vino blanco y pimienta negra.
Agregar la salsa a las gambas. En caso de que haya quedado excesivamente espesa, se puede añadir un poco del agua de la cocción.

Emplatar los spaghettis y colocar la salsa por encima.

Ricotta and Shrimp Spaghetti

This dish would never apper in an classical italian cookbook. Probably it is one of the dishes that when you explain it to an italian, he would look weird at you, although the key moment is when you make him try without telling him what it is. The usual reaction would be saying that is ok, but that his mother could make it better. Imagine my surprise when a good italian friend of mine asked me the recipe for his mother to cook it! So, here it is the recipe that surprised an italian.


Ingredients:



  • Half clove of garlic

  • 1 shallot pool-ball sized.

  • (if you do not find a shallot) 1 quarter of white onion.

  • Half red pepper (same amount of onion)

  • 3 sun-dried tomatoes in olive oil.

  • 200gr of peeled shrimp (these can be substituted by any other more expensive see food, depends on your budget)

  • 150gr of ricotta cheese.

  • 100ml of cream.

  • A bit of parsley

  • 250gr of (black) spaghetti al nero di seppia.


Elaboration:


You are going to need two stoves for this dish. In one of them, at max heat, place one pot with 2 liters of water to cook the pasta.


Meanwhile, start chopping thinly the garlid, and in small cubes the onion and the pepper.
In one pan at medium-high heat, put one tablespoon of olive oil and another of the oil where the sundried tomatoes are kept, and cook the onion, peper and garlic.
Once the onions are golden, add half of the shrimp. Once the shripms are cooked, add the cream.


Meanwhile, the water should be boiling by now. At this moment is when you add the salt, moreless two teaspoons of salt for each 100grams of pasta and liter of water (therefore, for this recipe, 4 ts of salt). Then, follow the pasta box instructions and your own taste to cook it. I like it "al dente", so, I cook it two or three minutes less than what it is written in the box. Add the pasta to the water and drain it when cooked.


The other ingredients should be ready for the blender. Put the mix in a blender and add the parsley and the ricotta cheese. Meanwhile, sautee the rest of shrimps if tha same pan with a bit of white wine and black pepper. Put the sauce back in the pan with the shrimp. In case it is too dense, add some of the water used for cooking the pasta to lighten it.


Put the spaghettis on the dish and then put the sauce on top.
