Spinach with blue cream

Today we have a bonus recipe! 

 It is very easy to cook, with very few and cheap ingredients. And even better: it works as a main course but also as a side for a piece of meat or fish. Moreover, and if willing, you can mix it with some pasta! What else? Well, you can prepare it in advance and take it with you to work the day after.

INGREDIENTS (for 2 people as main)
  • 500 g of spinach (better if fresh, although it’ll take a bit longer).
  • 100 ml of cooking cream.
  • 100 g of blue cheese.
  • 100 g of pinenuts.

  1. Boil the spinach for two minutes (if fresh, follow the package instructions if frozen).
  2. Meanwhile, sautee the pinenuts in a pan for a couple of minutes.
  3. Once the spinach are ready and drained, mix them with the pinenuts and the cream in a oven-ready recipient, putting the blue cheese on top.
  4. Bake in the oven for 8 minutes at 180°C.
