Pasta al Salmone

This is one of my pasta dishes with the most success! It is extremelly simple to execute and ensured success for salmon lovers! Pasta is normally kind of heavy dish, but this recipe produces a slightly light dish but also complete!

Pasta al Salmone

INGREDIENTS: (for 2 people)
  • 200 grs of smoked salmon: the better the salmon, the tastier result.
  • 250 grs of fusilli: I know I am never very restrictive but this time I strongly recommend you to use this pasta, all the ingredients will get stuck in the pasta spirals!
  • 1 zucchini.
  • 100ml of cream.

  • Cook the pasta following the instructions of the package.
  • With a coarse-grained grater, gate the zucchini! no knifes allowed! well grated and coarsed.
  • Sautée the grated zucchini at medium heat with some olive oil, salt and pepper.
  • Add the cream when the zucchini gets tender, usually 3 minutes.
  • Cut the smoked salmon.
  • When the pasta is ready, mix everything together with some fennel.
