This is a more refreshing version of the italian classic.
INGREDIENTS: (for 1 person)
- 3 slices of fried eggplant
- 2 slices of tomato
- 3 slices of fresh mozzarella di buffala
- A couple of fresh basil leaves.
PREPARATION
- Place a slice of eggplant. On top of it, one leaf of basil, one slice of tomato (with some salt) and the mozarella.
- Repeat the first step creating another level.
- Finish with eggplant, mozarella and a touch of olive oil.
